Assuming you're removing the keys and confirming the Disable by saving changes, your Forem should no longer contain the information required to authenticate via GitHub. Can you please take a video or some screenshots of your process and DM them to me so we can see what you're experiencing?
Can I confirm that you weren't able to remove the GitHub keys from Authentication under /admin/customization/config using the UX, and so you had to access the .env files yourself?
